Chicken Pad Thai- Keto friendly/ low carb

KETO PAD THAI

Yield: 2 servings


INGREDIENTS:

- 1 8OZ package of shiritaki noodles

- 1/2 lb chicken breast - pounded 1/2 inch thick and chop into bite size pieces

- Salt and pepper to taste

- 3 eggs

- 1 cup bean sprouts

- 1/4 c. sliced white onions

- 1/3 c. cilantro roughly chopped

- peanuts (optional)

- 1/3 cup green onions (optional)

** you can also use any left over veggies you have


SAUCE:

- 1/4 c SF Ketchup

- 2 tbsp fish sauce

- 2 tbsp. sweetner of choice

- 2 cloves garlic minced

- 1 tsp. peanut butter

- juice of 1 lime

- 1/2 tsp. crushed pepper flakes

- 1 tsp. soya sauce


INSTRUCTIONS:

1. Prepare your shiritaki noodles as per the instructions in the package.

2. Season chicken with salt and pepper to taste. Cook chicken in a pan over medium heat, stirring throughout until cooked through. Once cooked, set aside.

3. Whisk together all the sauce ingredients and set aside.

4. Crack the egg and whisk. Cook it like an omelette. Once cooked, cut into strips. Set aside.

5. Add more oil in a pan and saute onions until translucent. Add veggies and cook to your desired doneness.

6. Add the chicken, shiritaki noodles and sauce. Toss to coat the noodles and chicken.

7.Remove from heat and stir in green onions and cilantro. Now you are ready to eat and ENJOY!
